Hey Everyone! I thought it would be fun to share a recipe that I created (at least I think I created it) that is tasty and healthy and perfect for Fall. My hope is to continue this on for a "Recipe of the Week" as I really like to cook and bake and love sharing my creations or tasty food combos that end up working (yes, many do not... :P). Enjoy!
I came up with this one because I REALLY like Pasta Sauce but REALLY DO NOT like Pasta! So far, everyone I have made this for gives it the thumbs up - or maybe they're just being nice. YOU be the judge!
Pasta Sauce Twist
Start cooking brown rice on the stove top....enough for however many people you're serving (I always add a quick splash of olive oil to the water to prevent stickiness).
Saute some garlic in olive oil, how much is up to you. Then add in some chopped red onion, after that gets going for a while add in some mushrooms. You can also add in spinach, bell pepper, egg plant you name it, throw it in there.
In a larger pot, empty a jar of your favorite pasta sauce (the red kind people, not the white!), put it on low and start getting it warmed up. Add some freshly chopped tomatoes...its a nice addition to the sauce. As soon as all your veggies are ready, toss those in the sauce.
I always add some protein to this, but you don't have to. I've made it with chicken and shrimp, so far. If using chicken, boil it in some water. Then you can shred it easily and it will most definitely soak up the pasta sauce. If you do the chicken, do that first so you can add it in the pasta sauce right when you start warming it up. For Shrimp, add them to the saute pan after you add the mushrooms.
When it's all done, take a scoop of rice, and then smother it in your pasta sauce and veggies. I typically make an extra veggie for the side too, either a salad or asparagus/broccoli...whatever is green and in season!
